1 lb maple breakfast sausage (bulk or with casings removed)

1 medium sweet potato, peeled and cut into 1/2-inch cubes

1 red bell pepper, diced

1 small onion, diced

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp ground cinnamon

Salt and pepper to taste

3 eggs (optional, for topping)

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

1/4 cup shredded cheddar cheese (optional)

Instructions
 

Cook the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the maple sausage and use a spatula to break it into smaller pieces. Cook for about 5-7 minutes, stirring occasionally, until the sausage is browned and cooked through. Once cooked, remove the sausage from the skillet and set aside, leaving the drippings in the pan.

    Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Introduce the diced sweet potato and sauté for approximately 5 minutes, stirring occasionally, until they begin to soften and lightly caramelize.

      Add Aromatics: Stir in the diced onion and bell pepper into the skillet. Continue cooking for another 5-7 minutes, or until the onion turns translucent and the sweet potatoes are fork-tender.

        Season: Add the minced garlic, smoked paprika, ground cinnamon, salt, and pepper to the skillet. Toss all the ingredients to combine well, and cook for an additional 2 minutes, allowing the flavors to meld.

          Combine Ingredients: Return the cooked sausage to the skillet and mix everything together. Cook over medium heat for an additional 2 minutes to ensure that all ingredients are heated through and flavors are combined.

            Optional Eggs: If you choose to add eggs, use a spoon to create small wells in the mixture. Crack one egg into each well. Cover the skillet with a lid and cook until the eggs reach your desired level of doneness—approximately 4-5 minutes for runny yolks.

              Cheese & Garnish: If desired, sprinkle the shredded cheddar cheese over the top of the skillet. Cover the skillet again for a minute or until the cheese has melted. Finish by garnishing with freshly chopped parsley.
