Maple Roasted Beets with Feta

4 medium-sized beets

2 tablespoons olive oil

2 tablespoons pure maple syrup

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and black pepper to taste

1/2 cup crumbled feta cheese

1/4 cup walnuts, roughly chopped (optional)

Fresh parsley, finely chopped, for garnish (optional)

Instructions
 

Prepare the Beets: Start by preheating your oven to 400°F (200°C). Rinse the beets thoroughly under cool running water to remove any soil. Trim the tops and tails off each beet, then wrap each beet individually in aluminum foil, creating a sealed package.

    Roast the Beets: Place the wrapped beets on a baking sheet and roast them in the preheated oven for approximately 45–60 minutes. The beets are done when they can be easily pierced with a fork. Keep in mind that the roasting time may vary based on the size of your beets.

      Cool and Peel: After roasting, carefully unwrap the beets to release the steam that may escape. Allow them to cool for about 10 minutes. Once they are cool enough to handle, gently rub the skins off the beets using your fingers or a paper towel. The skins should come off easily.

        Cube the Beets: Cut the peeled beets into bite-sized cubes and transfer them to a mixing bowl.

          Dress the Beets: In a separate small bowl, whisk together the olive oil, maple syrup, fresh thyme, salt, and black pepper. Pour this delightful dressing over the cubed beets and gently toss to ensure they are well coated.
