1 large acorn squash

3 tablespoons extra virgin olive oil

4 tablespoons pure maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon freshly grated nutmeg

1/2 teaspoon sea salt

1/4 cup chopped pecans (optional)

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to get it ready for roasting.

    Prepare the Squash: Carefully take the acorn squash and slice it in half lengthwise from stem to bottom. Using a spoon, scoop out the seeds and any stringy bits inside. From each half, cut evenly into 1-inch thick rings, resulting in about 5-6 rings.

      Make the Maple Glaze: In a medium-sized bowl, whisk together the olive oil, maple syrup, ground cinnamon, freshly grated nutmeg, sea salt, and black pepper until the mixture is smooth and well combined.

        Coat the Squash Rings: On a large baking sheet lined with parchment paper for easy cleanup, lay out the squash rings in a single layer. Using a pastry brush, generously coat each ring with the maple glaze, ensuring they are nicely covered for maximum flavor.
