1 large egg yolk

3-4 tablespoons ice-cold water

¼ teaspoon salt

For the filling:

1 cup pecans (chopped, with extra for topping)

1 cup pure maple syrup

¼ cup packed brown sugar

2 large eggs

2 tablespoons unsalted butter (melted)

1 teaspoon pure vanilla extract

¼ teaspoon salt

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

Prepare the crust: In a mixing bowl, combine the flour and salt. Add the cold butter cubes and use a pastry cutter or your fingertips to blend until the mixture resembles coarse crumbs, similar to sand. Add in the granulated sugar and mix lightly.

    Incorporate the egg yolk: In a small bowl, whisk together the egg yolk and 3 tablespoons of ice-cold water. Gradually pour this mixture into the flour mixture while stirring, until the dough begins to form. If the dough seems too dry, add additional water by the teaspoon until it holds together.

      Chill the dough: Shape the dough into a flat disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes to firm up.

        Preheat the oven: Set your oven to preheat at 350°F (175°C).

          Roll out the crust: On a lightly floured surface, roll out the chilled dough into a circle that is slightly larger than a 9-inch pie pan.
