3 cups old-fashioned rolled oats

1 cup mixed nuts (walnuts, almonds, pecans), roughly chopped

1/2 cup sunflower seeds

1/2 cup pure maple syrup

1/4 cup coconut oil, melted

2 teaspoons ground cinnamon

1/4 teaspoon sea salt

1/2 cup dried fruit (raisins, cranberries, or cherries), optional

1/2 teaspoon pure vanilla extract

Preheat the Oven: Preheat your oven to 325°F (165°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, sunflower seeds, ground cinnamon, and sea salt. Stir the mixture thoroughly to ensure the dry ingredients are evenly distributed.

      Combine Wet Ingredients: In a separate bowl, whisk together the pure maple syrup, melted coconut oil, and pure vanilla extract until the mixture is smooth and well-blended.

        Combine Wet and Dry Mixtures: Slowly pour the wet mixture over the dry ingredients. Stir well until all ingredients are fully combined and every piece is coated with the syrupy goodness. If you wish to include dried fruits, add them in at this stage and gently fold them into the mixture.

          Form Clusters: Use your hands to take small handfuls of the mixture and squeeze them tightly to form clusters. Place these clusters onto the prepared baking sheet, ensuring there is space between them to allow for even baking.

            Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the granola clusters turn a lovely golden brown. Remember to stir the mixture halfway through the baking time to promote uniform cooking. Keep a close watch during the last few minutes to avoid burning.

              Cool Completely: Once baked, remove the sheet from the oven and allow the clusters to cool completely on the baking sheet. They will firm up and become crunchy as they cool.

                Store Properly: After cooling, if any clusters are larger than desired, gently break them apart. Transfer the granola clusters to an airtight container. They can be stored at room temperature for up to 2 weeks, maintaining their delightful crunch.
