1 cup granulated sugar

6 tablespoons unsalted butter, cut into small pieces

1/2 cup heavy cream, at room temperature

1 teaspoon sea salt

For the Mousse:

1 cup heavy cream (for whipping)

3 large eggs, separated

1/3 cup granulated sugar

1 teaspoon vanilla extract

1 tablespoon prepared salted caramel (from above)

To Serve:

Whipped cream (optional)

Additional salted caramel for drizzling

Dark chocolate shavings (optional)

Instructions
 

Make the Salted Caramel:

    - In a medium saucepan, add the granulated sugar and heat over medium heat. Stir gently with a wooden spoon until the sugar fully melts and transforms into a deep amber color, which should take around 10 minutes.

      - Once melted, carefully remove the pan from heat and whisk in the cut butter until it’s completely dissolved. Expect bubbling, so take care.

        - Gradually incorporate the heavy cream while whisking continuously to ensure a smooth consistency. Finally, stir in the sea salt. Allow the caramel to cool completely before using.

          Prepare the Mousse Base:

            - In a large mixing bowl, combine the egg yolks and granulated sugar, beating together until the mixture becomes pale and fluffy—this will take about 3-4 minutes.

              - Add the vanilla extract and 1 tablespoon of the cooled salted caramel to the yolk mixture, mixing until everything is well incorporated.

                Whip the Cream:

                  - In a separate clean bowl, whip 1 cup of heavy cream using an electric mixer until soft peaks form. Gently fold this whipped cream into the egg yolk mixture in three additions, being careful not to deflate the volume of the mousse.

                    Beat the Egg Whites:

                      - In another clean mixing bowl, whip the egg whites with the electric mixer until stiff peaks form. Carefully fold the beaten egg whites into the mousse mixture in two additions, ensuring all components are well blended.

                        Chill the Mousse:

                          - Transfer the mousse mixture into serving glasses or individual bowls and drizzle a bit of the prepared salted caramel on top of each serving. Cover with plastic wrap and refrigerate for a minimum of 2 hours to allow the mousse to set.
