Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

1 tablespoon baking powder

¼ teaspoon salt

½ cup milk

¼ cup vegetable oil

1 large egg

1 teaspoon vanilla extract

1 cup cream cheese, softened to room temperature

¼ cup powdered sugar

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1 cup mixed fresh fruit (suggestions: strawberries, blueberries, kiwi, banana)

Optional: fresh mint leaves for garnish

Instructions

Preheat the Oven:

Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or greasing it generously with cooking spray to prevent sticking.

      Mix Dry Ingredients:

In a large mixing bowl, thoroughly whisk together the all-purpose flour, granulated sugar, baking powder, and salt until they are well blended and no lumps remain.

          Combine Wet Ingredients:

In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until the mixture is fully combined and slightly frothy.

              Combine Dry and Wet Ingredients:

Gently pour the wet ingredients into the bowl with the dry mixture. Using a spatula or wooden spoon, stir the two mixtures together until just combined – take care not to overmix; a few lumps are perfectly fine.

                  Fill Muffin Tins:

Using a scoop or spoon, transfer the batter into the prepared muffin tin, filling each cup about three-quarters full. Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center comes out clean and the tops are lightly golden.

                      Cool the Muffins:

Once done, remove the muffins from the oven and allow them to cool in the pan for approximately 5 minutes. After that, transfer the muffins to a wire rack to cool completely.

                          Prepare the Cream Cheese Topping:

In a mixing bowl, add the softened cream cheese, powdered sugar, lemon juice, and lemon zest. Beat with an electric mixer or whisk until smooth, creamy, and delightful in flavor.

                              Assemble Fruit Pizza Muffins:

Once the muffins are completely cooled, generously spread a layer of the creamy lemon-infused cream cheese topping over the top of each muffin.

                                  Add Fresh Fruit:

Decorate the muffins with a vibrant medley of mixed fresh fruits. Aim to arrange them artistically for an inviting presentation that highlights the colorful nature of your toppings.

                                      Garnish and Serve:

For an added touch of freshness, you can place a mint leaf on top of each muffin. These Fruity Delight Muffins are best served immediately, but they can also be stored in an airtight container in the refrigerator for a few days.
