Ingredients

1 ½ cups rolled oats

1 cup almond flour (or your preferred flour)

½ cup honey or maple syrup

1 cup plain Greek yogurt

Zest and juice of 1 large lemon

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon salt

1 cup fresh blueberries (plus extra for topping, if desired)

Optional: ¼ cup chopped nuts (e.g., almonds or walnuts) for added crunch

Instructions

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8 inch baking pan by greasing it or lining it with parchment paper to facilitate easy removal later.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, baking powder, and salt. Use a whisk or a spoon to stir these dry ingredients together until they are evenly distributed.

Prepare Wet Ingredients: In another bowl, whisk together the Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, and vanilla extract until the mixture reaches a smooth and creamy texture.

Combine Ingredients: Pour the wet mixture into the bowl with the dry ingredients. Gently stir until the ingredients are just combined. Carefully fold in the blueberries and optional nuts (if using), taking care not to overly crush the blueberries.

Spread Mixture: Transfer the cohesive mixture into your prepared baking pan. Use a spatula or the back of a spoon to spread it evenly across the pan. For an appealing presentation, sprinkle some extra blueberries on top.

Bake: Place the baking pan in the center of the preheated oven. Bake for 25-30 minutes, or until the edges turn a light golden brown and the center is set.

Cool Down: Upon removing the pan from the oven, allow it to cool in the pan for about 10 minutes. Then, gently lift the bars out using the parchment paper and transfer them to a wire rack to cool completely.

Slice and Serve: Once cooled, use a sharp knife to cut the bars into squares or rectangles as desired. Serve immediately or store any leftovers in an airtight container in the fridge for up to one week.
