2 salmon fillets (6 oz each)

4 cups mixed greens (such as arugula, spinach, and kale)

1 cup cherry tomatoes, halved

1 ripe avocado, diced

1/2 cucumber, thinly sliced

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup olives (black or green), pitted and sliced

1/4 cup extra virgin olive oil

Juice from 2 fresh lemons

1 teaspoon Dijon mustard

1 teaspoon honey

Salt and freshly cracked pepper, to taste

Fresh parsley or dill, for garnish (optional)

Instructions
 

Cook the Salmon: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and place the salmon fillets skin-side down. Drizzle each fillet with extra virgin olive oil and season generously with salt and freshly cracked pepper. Bake for 12-15 minutes, or until the salmon is opaque and flakes easily with a fork. Once cooked, remove from the oven and let cool slightly.

    Prepare the Dressing: In a small mixing bowl, combine the olive oil, freshly squeezed lemon juice, Dijon mustard, honey, and a pinch of salt and pepper. Whisk vigorously until the ingredients are well blended. Taste and adjust the seasoning if necessary.
