2 medium zucchinis, spiralized into noodles (zoodles)

1 pound boneless, skinless chicken breasts

2 tablespoons olive oil, divided

4 cloves garlic, minced

Juice and zest of 1 large lemon

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

1 cup cherry tomatoes, halved

¼ cup fresh parsley, chopped

Optional: Grated Parmesan cheese for serving

Prepare the Chicken: Begin by seasoning the chicken breasts generously with salt, pepper, oregano, and thyme. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned chicken to the skillet and cook for approximately 6-7 minutes on each side, or until the chicken is fully cooked through and has a lovely golden-brown color. Once cooked, remove the chicken from the skillet and allow it to rest for a few minutes before slicing into strips.

    Sauté the Garlic: In the same skillet that you used for the chicken, add the remaining tablespoon of olive oil. Lower the heat to medium and then incorporate the minced garlic. Sauté the garlic for about 1 minute, stirring frequently, until it becomes fragrant. Be careful not to let it brown, as this can lead to a bitter flavor.

      Cook the Zoodles: Next, introduce the spiralized zucchini noodles (zoodles) to the skillet. Toss them gently in the garlic-infused oil to coat. Sauté the zoodles for about 2-3 minutes, just until they become tender-crisp (al dente). Keep a close eye on them; overcooking can lead to excess moisture being released.

        Add Lemon and Tomatoes: Stir in the fresh lemon juice and zest, along with the halved cherry tomatoes. Mix thoroughly to combine all ingredients. Allow the mixture to cook for another minute, just until the tomatoes start to soften and release some of their juices.
