200g Kit Kat bars, chopped (reserve a few pieces for topping)

250g digestive biscuits, finely crushed

100g unsalted butter, melted and slightly cooled

600g cream cheese, at room temperature

200g powdered sugar, sifted

200ml heavy whipping cream

1 tsp pure vanilla extract

2 tbsp unsweetened cocoa powder

Pinch of fine sea salt

Optional: Chocolate shavings or curls for decoration

Prep the Base: Preheat your oven to 350°F (175°C). Place the digestive biscuits in a food processor and pulse until they resemble fine crumbs. Add the melted butter to the crumbs and pulse again until well combined. Firmly press this mixture into the bottom of a 9-inch springform pan to create a solid crust. Bake in the preheated oven for 10 minutes, then remove and allow to cool completely at room temperature.

    Prepare the Filling: In a large mixing bowl, add the softened cream cheese and sifted powdered sugar. Use an electric mixer to beat these together on medium speed until the mixture is smooth, creamy, and free of lumps, approximately 3 minutes.

      Add Whipping Cream: In a separate chilled bowl, pour in the heavy whipping cream and the vanilla extract. Use a hand mixer to whip the cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture, being careful to maintain the light, airy texture.

        Integrate the Kit Kats: Chop the Kit Kat bars into small bite-sized pieces, keeping a couple aside for garnish. Carefully fold the chopped Kit Kats into the cream cheese mixture, along with the cocoa powder and a pinch of sea salt. Mix gently until all ingredients are well combined and uniformly distributed.

          Combine the Layers: Pour the cheesecake filling over the cooled digestive biscuit crust, smoothing the top with a spatula to create an even layer.

            Chill the Cheesecake: Wrap the springform pan tightly in plastic wrap and refrigerate for at least 6 hours, or ideally overnight, allowing the cheesecake to set properly and develop its flavors.

              Garnish and Serve: After the cheesecake has set, carefully remove it from the springform pan. Top the cheesecake with the reserved chopped Kit Kat pieces and sprinkle with chocolate shavings or curls for an extra decorative touch. Slice with a sharp knife and serve chilled.
