Kid-Friendly Veggie-Packed Cheesy Quesadillas

Ingredients
  

4 large whole wheat tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup fresh spinach, finely chopped

1/2 cup bell peppers, finely diced (choose your favorite colors)

1/2 cup zucchini, grated

1/2 cup corn (canned or frozen, thawed if frozen)

1 small carrot, grated

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1 tablespoon olive oil (for cooking)

Optional: salsa or guacamole for dipping

Instructions
 

Prepare the Veggies: In a medium bowl, combine the chopped spinach, diced bell peppers, grated zucchini, corn, and grated carrot. Toss everything together until well mixed and set aside.

    Combine Cheeses: In another bowl, blend together the shredded cheddar cheese and mozzarella cheese. Feel free to adjust the amounts depending on your cheese preference for creaminess and flavor!

      Assemble the Quesadillas:

        - On a clean, flat surface, lay out one whole wheat tortilla.

          - Evenly sprinkle a generous amount of the cheese mixture over one half of the tortilla.

            - Layer the prepared veggie mixture on top of the cheese.

              - Add another sprinkle of cheese over the vegetables for extra melty goodness, then fold the tortilla in half over the filling.

                Cook the Quesadillas:

                  - Heat a non-stick skillet over medium heat. Add 1/2 tablespoon of olive oil to the hot skillet.

                    - Once the oil is shimmering, carefully place the folded quesadilla in the skillet. Cook for about 2-3 minutes, or until the bottom is golden brown and the cheese begins to melt.

                      - Using a spatula, gently flip the quesadilla over. If needed, add the remaining olive oil to the skillet. Cook for another 2-3 minutes until this side is golden brown and the cheese is fully melted.

                        Slice and Serve: Remove the quesadilla from the skillet and allow it to rest for one minute. Cut the quesadilla into wedges and serve warm with a side of salsa or guacamole for dipping.
