Ingredients

1 lb ground turkey

2 cups fresh spinach, finely chopped (or 1 cup frozen spinach, fully thawed and drained)

1/2 cup whole wheat breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup onion, finely chopped

2 cloves garlic, minced

1 large egg

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and black pepper, to taste

1 cup marinara sauce (for serving)

Fresh basil leaves, for garnish (optional)

Instructions

Preheat the Oven: Set your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it to prevent sticking.

Prepare the Spinach: If using fresh spinach, wash it thoroughly, remove any thick stems, and chop finely. In case of frozen spinach, ensure it's completely defrosted and has been drained well to remove excess moisture.

Mix the Ingredients: In a large mixing bowl, combine the ground turkey, chopped spinach, breadcrumbs, grated Parmesan cheese, finely chopped onion, minced garlic, egg, dried oregano, and dried basil. Season with a sprinkle of salt and black pepper.

Combine Thoroughly: Using your hands, gently mix all the ingredients until they are just combined. Take care not to overmix, as this can result in tougher meatballs.

Shape the Meatballs: Use a tablespoon to scoop out portions of the mixture and roll each into a ball. Arrange the meatballs on the prepared baking sheet, ensuring they are spaced evenly apart.

Bake the Meatballs: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the meatballs are firm, cooked through, and golden brown on the outside. An internal temperature of 165°F (74°C) confirms they are fully cooked.

Serve: While the meatballs are baking, gently heat the marinara sauce in a small saucepan over medium heat. Once the meatballs are done, serve them alongside the warm marinara sauce for dipping. Garnish with fresh basil leaves if desired for a pop of color.

Enjoy: These mini meatballs make a fantastic, healthy option for kids and adults alike. Serve them over pasta, in a sub roll, or simply enjoy them on their own as a nutritious snack!
