Ingredients

1 pound large shrimp, peeled and deveined

1 cup walnuts

1/2 cup cornstarch

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

Vegetable oil, for frying

1/2 cup honey

3 tablespoons mayonnaise

1 tablespoon sweetened condensed milk

1 tablespoon fresh lemon juice

Green onions, thinly sliced, for garnish

Sesame seeds, for garnish

Instructions

Prepare the Walnuts:

    - In a medium saucepan, place 1 cup of walnuts and add enough water to cover them completely. Bring the water to a rolling boil over medium heat. Once boiled, drain the walnuts and return them to the pan.

      - Add 1/2 cup of sugar and 1/2 cup of water to the walnuts and cook it on medium heat. Stir continuously until the mixture thickens to a syrupy consistency and coats the walnuts. Remove the pan from heat and spread the candied walnuts out on a sheet of parchment paper to cool.

        Prepare the Batter:

          - In a large mixing bowl, combine the cornstarch, all-purpose flour, salt, and black pepper. In a separate bowl, whisk together the beaten eggs and milk until well blended.

            - Working with the shrimp, first dip each one into the cornstarch mixture, ensuring an even coating. Next, dip it into the egg mixture, allowing any excess to drip off, then return the shrimp to the cornstarch mixture for a double coating.

              Fry the Shrimp:

                - Heat vegetable oil in a deep skillet or wok over medium-high heat, ensuring it reaches approximately 350°F.

                  - Carefully add the shrimp in batches to the hot oil, frying until they turn golden brown and crispy, which should take about 2-3 minutes on each side. Use a slotted spoon to transfer the cooked shrimp to a plate lined with paper towels to absorb any excess oil.

                    Make the Sauce:

                      - In a clean bowl, whisk together the honey, mayonnaise, condensed milk, and lemon juice until the mixture is smooth and well combined. Taste and adjust sweetness if desired.

                        Toss and Serve:

                          - In a large mixing bowl, gently combine the fried shrimp with the honey sauce, ensuring each piece is evenly coated. Add the cooled candied walnuts to the shrimp mixture and toss delicately to avoid breaking the shrimp.

                            Garnish and Serve:

                              - Transfer the honey walnut shrimp to a beautiful serving platter. Garnish with a scattering of sliced green onions and a sprinkle of sesame seeds on top to add a touch of elegance.
