Ingredients

1 lb baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons honey

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and black pepper to taste

Fresh parsley, finely chopped (for garnish)

Instructions

Prepare the Marinade: In a large mixing bowl, combine the honey, olive oil, balsamic vinegar, garlic powder, smoked paprika, salt, and black pepper. Whisk the ingredients together until the mixture is smooth and fully blended.

Marinate the Carrots: Add the baby carrots to the bowl, ensuring every carrot is coated with the honey marinade. Cover the bowl with plastic wrap or a lid and let the carrots marinate for at least 30 minutes at room temperature to allow the flavors to meld.

Preheat the Grill: While the carrots are marinating, preheat your grill to medium-high heat, approximately 375°F. If using a grill pan, place it over medium heat on the stovetop and allow it to warm up.

Grill the Carrots: Once the grill is hot, place the marinated carrots directly on the grill grates or in the grill pan. Grill for 8-10 minutes, turning them halfway through the cooking time. Keep an eye on them to ensure they become tender and develop appealing grill marks without becoming overly charred.

Glaze with Remaining Marinade: In the last two minutes of grilling, take the remaining marinade and brush it generously over the carrots. This step enhances the flavor and results in a gorgeous glossy finish.

Serve Up: After grilling, carefully transfer the carrots to a serving platter. Finish with a sprinkle of freshly chopped parsley for a pop of color and freshness before serving.
