1 pound large shrimp, peeled and deveined

3 tablespoons honey

4 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon fresh ginger, grated

1 tablespoon vegetable oil

Salt and pepper to taste

For the Vegetable Fried Rice:

2 cups cooked jasmine rice (preferably day-old)

2 tablespoons vegetable oil

1 small onion, diced

2 cloves garlic, minced

1 cup mixed vegetables (peas, carrots, bell peppers, and corn)

2 large eggs, beaten

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

Salt and pepper to taste

Chopped fresh cilantro or extra green onions for garnish

Instructions
 

Prepare the Honey Garlic Sauce:

    - In a mixing bowl, whisk together the honey, minced garlic, soy sauce, sesame oil, and grated ginger until well combined. Set the sauce aside for later use.

      Cook the Shrimp:

        - In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.

          - Once the oil shimmers, add the peeled and deveined shrimp. Season the shrimp with a pinch of salt and pepper.

            - Sauté the shrimp for about 2-3 minutes until they turn a rosy pink and are nearly cooked through.

              - Pour the prepared honey garlic sauce over the shrimp, stirring frequently for another 2 minutes until the shrimp are fully cooked and well coated in the sauce. Remove the skillet from heat and garnish with sliced green onions and a sprinkle of sesame seeds.

                Make the Vegetable Fried Rice:

                  - Using the same skillet, add the remaining tablespoon of vegetable oil.

                    - Sauté the diced onion for about 2 minutes until it turns translucent.

                      - Add the minced garlic and the mixed vegetables into the skillet, cooking for an additional 2-3 minutes until they start to soften.

                        - Push the vegetable mixture to one side of the skillet, then pour the beaten eggs into the empty side. Scramble the eggs until they are fully cooked, before mixing them into the vegetable medley.

                          - Add in the cooked jasmine rice, along with the soy sauce and oyster sauce (if using). Toss all the ingredients together to ensure they are evenly combined and heated through, about 3-4 minutes.

                            - Season the fried rice with salt and pepper to taste, and finish off with a garnish of chopped fresh cilantro or additional green onions.

                              Serve:

                                - To serve, plate a generous helping of the vegetable fried rice and top it with the honey garlic shrimp.
