Ingredients

1 lb large shrimp, peeled and deveined

1/2 cup honey

1/4 cup low-sodium soy sauce

2 tablespoons rice vinegar

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 tablespoons sesame oil

1 tablespoon vegetable oil

2 cups cooked jasmine rice

1 cup broccoli florets

1/2 red bell pepper, thinly sliced

1/4 cup chopped green onions (for garnish)

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Instructions

Prepare the Shrimp Marinade: In a medium mixing bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, and grated ginger until the honey is fully dissolved and the mixture is well combined.

Marinate the Shrimp: Carefully place the peeled and deveined shrimp into the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for 15-20 minutes to allow the flavors to meld.

Cook the Vegetables: In a large skillet or wok, heat the vegetable oil over medium-high heat. When the oil is hot, add the broccoli florets and sliced red bell pepper. Sauté the vegetables for about 5 minutes, or until they are vibrant and tender-crisp. Once cooked, transfer the vegetables to a plate and set aside.

Sauté the Shrimp: In the same skillet, reduce the heat slightly and add sesame oil. When the oil is hot, add the marinated shrimp along with the marinade. Cook for 3-4 minutes, stirring occasionally, until the shrimp are pink, opaque, and the sauce has thickened slightly. Season with salt and pepper to taste.

Combine Ingredients: Return the sautéed broccoli and red bell pepper to the skillet with the shrimp. Gently toss all the ingredients together until the vegetables are heated through and well integrated with the shrimp and sauce.

Serve: In each serving bowl, place a generous mound of jasmine rice. Spoon the honey garlic shrimp and vegetable mixture over the rice. Garnish with freshly chopped green onions and a sprinkle of sesame seeds for added crunch and flavor.

Enjoy: Serve the dish immediately while it's hot and enjoy the delightful balance of sweet and savory that fills each bite!
