8 oz elbow macaroni

2 cups fresh broccoli florets

3 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

3 tablespoons unsalted butter

1/4 cup all-purpose flour

3 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil (optional, for breadcrumbs)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the elbow macaroni and cook according to the package instructions until al dente, typically about 6-8 minutes. In the last 3 minutes of cooking, gently add the fresh broccoli florets. Once cooked, drain the pasta and broccoli together and set aside.

    Make the Cheese Sauce: In a large saucepan over medium heat, melt the unsalted butter. Once melted and bubbly, add the all-purpose flour, whisking continuously for about 2 minutes until a smooth paste forms (this is your roux). Gradually pour in the whole milk while whisking to avoid lumps. Continue to cook, stirring frequently, for about 5-7 minutes or until the sauce thickens slightly and coats the back of a spoon.

      Add Seasonings: Stir the garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper into the thickened milk mixture, mixing thoroughly to incorporate the flavors.

        Incorporate the Cheese: Reduce the heat to low and slowly add the shredded sharp cheddar and mozzarella cheeses to the sauce. Stir gently until the cheeses are fully melted, resulting in a creamy and smooth cheese sauce.

          Combine Pasta and Sauce: Carefully fold the drained macaroni and broccoli into the cheese sauce, ensuring that every piece of pasta and broccoli is enveloped in the creamy mixture.
