Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

6 cups romaine lettuce, chopped into bite-sized pieces

1 cup cherry tomatoes, halved

1/2 cup freshly grated Parmesan cheese

1 cup crunchy croutons

1 ripe avocado, sliced (optional)

For the Caesar Dressing:

1/4 cup mayonnaise

2 tablespoons Dijon mustard

1 tablespoon Worcestershire sauce

2 cloves garlic, minced

1 tablespoon fresh lemon juice

1/4 cup freshly grated Parmesan cheese

Salt and freshly ground black pepper, to taste

Instructions

Prepare the Chicken:

    - Begin by preheating your grill or a stovetop grill pan to medium-high heat.

      - Coat the chicken breasts with olive oil. Season generously with salt, freshly ground black pepper, garlic powder, and smoked paprika for a hint of smokiness.

        - Place the seasoned chicken on the grill and cook for approximately 6-7 minutes on each side, or until the internal temperature reads 165°F (75°C).

          - Once fully cooked, remove the chicken from the heat and allow it to rest for about 5 minutes. This helps keep the chicken juicy. Slice it into strips just before serving.

            Make the Caesar Dressing:

              - In a mixing bowl, add the mayonnaise, Dijon mustard, Worcestershire sauce, minced garlic, and fresh lemon juice.

                - Whisk all the ingredients together until the mixture is smooth and well combined.

                  - Gently fold in the freshly grated Parmesan cheese and season with salt and freshly ground black pepper to taste. Taste the dressing and adjust the seasoning if necessary to achieve your desired flavor.

                    Assemble the Salad:

                      - In a large salad bowl, add the chopped romaine lettuce and drizzle in the Caesar dressing. Toss well until every leaf is generously coated.

                        - Incorporate the halved cherry tomatoes and croutons into the salad, mixing gently to avoid crushing the tomatoes.

                          - Arrange the sliced, grilled chicken neatly on top of the salad and finish by sprinkling the remaining grated Parmesan cheese over everything.

                            Serve:

                              - For an extra touch, add slices of avocado on top for a creamy texture that complements the crunch of the salad.

                                - Serve the Chicken Caesar Salad immediately to enjoy the freshness of the ingredients!
