1 cup couscous

1 ¼ cups vegetable broth (or water)

1 tablespoon olive oil

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon salt

¼ teaspoon black pepper

½ cup cherry tomatoes, halved

½ cucumber, diced

½ cup bell pepper, diced (any color)

¼ cup red onion, finely chopped

1 cup fresh parsley, chopped

¼ cup fresh mint, chopped

1 avocado, sliced (for serving)

Feta cheese, crumbled (optional)

Extra lemon wedges (for garnish)

Instructions
 

Cook the Couscous: In a medium-sized pot, bring the vegetable broth (or water) to a vigorous boil. Once boiling, add the couscous along with the salt and olive oil. Stir briefly to combine, then cover the pot with a lid. Remove it from the heat and let it rest for about 5 minutes, allowing the couscous to absorb the liquid completely.

    Fluff the Couscous: After 5 minutes, remove the lid and use a fork to fluff the couscous gently, separating the grains. Incorporate the lemon zest and juice into the couscous, ensuring an even distribution of flavor.

      Prepare the Vegetables: While the couscous is resting, chop the cherry tomatoes, cucumber, bell pepper, and red onion into bite-sized pieces. Transfer the chopped vegetables to a large mixing bowl.

        Add Fresh Herbs: Sprinkle the freshly chopped parsley and mint over the vegetable mixture. Toss everything together until the vegetables and herbs are well mixed.

          Combine Ingredients: Gently fold the fluffed couscous into the bowl of diced vegetables and herbs. Season with black pepper and, if desired, additional salt to taste. Mix carefully until everything is thoroughly combined.
