1 cup green or brown lentils, thoroughly rinsed

2 tablespoons olive oil

1 medium onion, finely diced

2 cloves garlic, minced

2 medium carrots, peeled and diced

2 celery stalks, diced

1 bell pepper (red or yellow), diced

1 medium zucchini, diced

1 cup diced tomatoes (canned or fresh, with their juices)

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

6 cups vegetable broth

2 cups spinach or kale, roughly chopped

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté for about 5 minutes, stirring occasionally, until the onion is soft and translucent.
