Ingredients

1 lb ground turkey

2 medium sweet potatoes, peeled and diced into 1/2-inch cubes

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup corn kernels (fresh or frozen)

1 can (15 oz) black beans, drained and rinsed

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and freshly cracked black pepper, to taste

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

1 ripe avocado, sliced (for serving)

Lime wedges (for serving)

Instructions

Heat the Skillet: In a large skillet, pour in the olive oil and heat over medium. Once hot, add the finely chopped onion and sauté for about 3-4 minutes, or until the onion becomes translucent and fragrant.

Sauté the Vegetables: Introduce the minced garlic and diced red bell pepper to the skillet. Sauté for an additional 2-3 minutes, stirring occasionally, until the bell pepper softens and the garlic becomes aromatic.

Cook the Sweet Potatoes: Incorporate the diced sweet potatoes into the skillet. Sprinkle the mixture with smoked paprika, cumin, chili powder, salt, and black pepper. Stir to coat and cook for approximately 10-12 minutes, stirring occasionally, until the sweet potatoes are tender when pierced with a fork.

Add the Turkey: Create a small space in the skillet by pushing the sweet potato mixture to the side. In the cleared area, add the ground turkey. Use a spatula to break it up and cook for about 5-7 minutes, or until the turkey is completely browned and no longer pink.

Combine Ingredients: Once the turkey is thoroughly cooked, stir in the corn and black beans. Mix all ingredients thoroughly and allow to cook together for another 3-4 minutes, until everything is heated through.

Adjust Seasoning: Taste the mixture and adjust the seasoning as necessary, adding more salt, pepper, or spices to suit your preferences.

Serve: Remove the skillet from heat. Garnish generously with fresh cilantro. Serve the dish warm, accompanied by slices of creamy avocado and lime wedges for a zesty kick.

                Prep Time: 15 minutes | Total Time: 40 minutes | Servings: 4

                  - Presentation Tips: For a vibrant serving, plate portions of the skillet mixture in shallow bowls, draping avocado slices on top while scattering cilantro leaves for color. Serve the lime wedges on the side for easy squeezing over the hearty blend.
