Healthy Chickpea Salad Wraps

1 can (15 oz) chickpeas, drained and rinsed

1/2 cup plain Greek yogurt (or a vegan alternative)

1 tablespoon extra virgin olive oil

1 tablespoon freshly squeezed lemon juice

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon ground cumin

Salt and freshly ground black pepper to taste

1/2 cup diced cucumber

1/2 cup diced bell pepper (choose your favorite color)

1/4 cup finely chopped red onion

1/4 cup freshly chopped parsley or cilantro

4 large whole grain or spinach tortillas

Optional: sliced avocado and a handful of mixed greens for serving

Instructions
 

In a spacious mixing bowl, combine the drained and rinsed chickpeas. Using a fork or a potato masher, gently mash the chickpeas until they are somewhat chunky, ensuring that some whole chickpeas remain for a delightful texture.

    In another bowl, whisk together the Greek yogurt, olive oil, lemon juice, Dijon mustard, garlic powder, onion powder, ground cumin, salt, and pepper. Mix thoroughly until the ingredients are well blended and the mixture is smooth.

      Pour the creamy yogurt dressing over the mashed chickpeas. Use a spatula to carefully fold the mixture until the chickpeas are evenly coated.

        Add the diced cucumber, diced bell pepper, chopped red onion, and your choice of fresh herbs to the chickpea mixture. Gently stir to incorporate all the ingredients, tasting as you go to adjust the seasoning if needed.

          Take each tortilla and lay it flat on a clean surface. Spoon an equal portion of the chickpea salad mixture into the center of each tortilla.
