Ingredients

1 ½ cups whole wheat flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon salt

½ cup coconut sugar (or brown sugar)

½ cup unsweetened applesauce

2 large eggs

1 teaspoon vanilla extract

2 cups freshly grated carrots (approximately 3 medium carrots)

½ cup crushed pineapple, well-drained

¼ cup chopped walnuts (optional for crunch)

¼ cup raisins (optional for sweetness)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing each cup with cooking spray to prevent sticking.

Mix Dry Ingredients: In a large mixing bowl, combine the whole wheat flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Whisk these ingredients together until they are evenly mixed and free of lumps.

Prepare Wet Ingredients: In a separate bowl, blend the coconut sugar and applesauce until the mixture is smooth and creamy. Gradually add each of the two eggs, mixing thoroughly after each addition. Finally, stir in the vanilla extract to the wet mixture until well combined.

Combine the Mixtures: Gently fold the wet mixture into the dry ingredients using a spatula or wooden spoon. Take care not to over-mix; it’s perfectly fine if the batter retains some lumps.

Incorporate Carrots and Fruits: Carefully fold in the freshly grated carrots along with the drained crushed pineapple, walnuts (if using), and raisins (if using). This will add a beautiful texture and flavor to your muffins.

Fill the Muffin Tin: Evenly distribute the batter into the prepared muffin cups, filling each about three-quarters full to allow for rising.

Bake to Perfection: Place the muffin tin in the preheated oven and bake for 18-20 minutes. To test for doneness, insert a toothpick into the center of a muffin; it should come out clean when the muffins are ready.

Cool the Muffins: Once baked, take the muffins out of the oven and let them cool in the tin for about 5 minutes. Afterward, carefully transfer the muffins to a wire rack to cool completely, ensuring they don’t become soggy.

Serve and Enjoy: Relish your delightful carrot bliss muffins warm, or store any leftovers in an airtight container. They can also be frozen for up to 3 months—simply thaw them when you’re ready for a delicious treat!
