Ingredients

2 cups rolled oats

1 cup almond flour (or substitute with whole wheat flour for a different flavor)

1/2 cup maple syrup or honey (for sweetness)

1/3 cup coconut oil, melted (can also use unsalted butter)

1 teaspoon pure vanilla extract

1 teaspoon baking powder (to help the bars rise)

1/2 teaspoon salt (to enhance flavor)

1 cup fresh or frozen blueberries (thaw frozen blueberries before use)

1/2 teaspoon ground cinnamon (optional, for warmth)

1/4 cup chopped nuts (like walnuts or almonds, optional for added crunch)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8 inch baking dish by lining it with parchment paper, ensuring that there’s some overhang on the sides for easy removal later.

Combine Dry Ingredients: In a large mixing bowl, add the rolled oats, almond flour, baking powder, salt, and ground cinnamon (if using). Use a whisk or spoon to blend these ingredients thoroughly, ensuring they are evenly mixed.

Blend Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, maple syrup (or honey), and vanilla extract until the mixture is smooth and well combined.

Integrate Wet and Dry Mixtures: Pour the wet mixture into the bowl of dry ingredients. Stir gently until just combined; be careful not to overmix. Next, gently fold in the blueberries and, if desired, the chopped nuts for an extra layer of texture.

Fill the Baking Dish: Transfer the mixture into the prepared baking dish. Use a spatula to spread the mixture evenly across the dish and press down firmly to pack it into a compact layer.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes. The bars are ready when the edges turn golden brown and a toothpick inserted in the center comes out clean.

Cool Down: Remove the baking dish from the oven and allow the bars to cool in the dish for about 10 minutes. Then, carefully lift them out using the parchment paper overhang and transfer to a wire rack to cool completely.

Cut into Bars: Once fully cooled, use a sharp knife to cut the oat mixture into squares or rectangles, based on how big you want your portions.

Storage: Store the oat bars in an airtight container. They can be kept at room temperature for a few days, or, for extended freshness, refrigerate them.
