Ingredients

8 ounces elbow macaroni

1 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon granulated sugar

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1/2 cup diced celery

1/2 cup diced carrots

1/2 cup sweet pickle relish

1/4 cup finely chopped red onion

1/2 cup diced ham (optional)

1/2 cup diced pineapple (fresh or canned, drained)

1/4 cup chopped green onions (for garnish)

Instructions

Cook the Pasta: In a large pot, bring a generous amount of salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Once done, drain the pasta in a colander and rinse it under cold running water to stop the cooking process. Allow the macaroni to cool completely before setting it aside.

Prepare the Dressing: In a large mixing bowl, combine the mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and black pepper. Use a whisk to blend all the ingredients together until the mixture is smooth and well incorporated.

Combine Ingredients: Add the cooled macaroni to the bowl with the dressing. Then, incorporate the diced celery, carrots, sweet pickle relish, red onion, and diced ham (if using). Gently fold the ingredients together, making sure that the macaroni and vegetables are evenly coated in the dressing.

Add Pineapple: Carefully add the diced pineapple to the salad. Gently fold it in, ensuring that the pineapple pieces remain intact for delightful bursts of sweetness with each bite.

Chill the Salad: Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Allow the salad to chill for a minimum of 2 hours, giving the flavors ample time to meld. For an even richer taste, consider making the salad a day in advance.

Serve: Prior to serving, give the salad a gentle stir to redistribute the ingredients. Taste and adjust the seasoning with additional salt or pepper if desired. Just before serving, sprinkle the chopped green onions over the top for a fresh, vibrant finish. Serve chilled and savor the tropical flavors of your Hawaiian Macaroni Salad!
