2 cups cooked jasmine rice

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

½ cup diced onion

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil

4 large lettuce leaves (for wraps) or 4 large tortillas (your choice)

½ cup shredded cheddar cheese (optional)

Fresh cilantro, chopped (for garnish)

      Season the Mixture: Stir in the diced Hatch green chilies, black beans, corn, ground cumin, smoked paprika, salt, and black pepper. Mix everything well, ensuring it’s evenly combined.
