1 cup unsweetened almond milk (or any milk of your preference)

1 ripe banana, well-mashed

¼ cup honey or maple syrup

1 teaspoon pure vanilla extract

1 teaspoon baking powder

½ teaspoon ground cinnamon

¼ teaspoon salt

1 ½ cups fresh raspberries (you can use frozen if fresh ones are not available)

Optional toppings: chopped nuts, a dollop of yogurt, or a sprinkle of coconut flakes for garnish

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare your muffin tin by either greasing it with cooking spray or lining it with muffin liners for easier cleanup.

    Combine Dry Ingredients: In a spacious mixing bowl, incorporate the rolled oats, baking powder, ground cinnamon, and salt. Stir them together well to ensure an even distribution of all dry ingredients.

      Mix Wet Ingredients: In a separate bowl, vigorously whisk together the almond milk, mashed banana, honey (or maple syrup), and vanilla extract until the mixture is smooth and blended.

        Combine Mixtures: Gradually pour the wet mixture into the bowl containing the dry ingredients. Stir gently until just combined, taking care not to overmix—some lumps are perfectly fine!
