Ingredients

2 medium zucchinis, sliced into ½-inch rounds

8 ounces halloumi cheese, sliced into ½-inch thick pieces

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Balsamic glaze (optional, for drizzling)

Instructions

Prepare the Zucchini:

    - Begin by preheating your grill or grill pan over medium heat.

      - In a large mixing bowl, add the sliced zucchini. Pour in the olive oil, then sprinkle the dried oregano, garlic powder, salt, and pepper over the top.

        - Toss the zucchini slices gently until they are evenly coated with the oil and seasonings, ensuring each piece gets a taste.

          Grill the Zucchini:

            - Arrange the seasoned zucchini slices in a single layer on the grill. Cook for approximately 3–4 minutes on one side, then flip them over to sear the other side for another 3–4 minutes. They should become tender and develop beautiful grill marks. Once done, remove the zucchini from the grill and set aside on a clean plate.

              Grill the Halloumi:

                - Next, place the halloumi slices directly onto the grill. Grill for about 2–3 minutes on one side until golden brown, then flip carefully using a spatula. Grill the other side for another 2–3 minutes until it's crispy and lightly charred. Keep a close eye on the halloumi to prevent burning.

                  Assemble the Stacks:

                    - On a serving platter, begin creating your stacks. Start with one slice of grilled zucchini as the base. Layer a slice of the grilled halloumi on top, followed by another zucchini slice. Repeat this process until all ingredients are used, finishing with a zucchini slice on the top.

                      Garnish and Serve:

                        - To elevate the presentation, garnish the stacks with fresh basil leaves. For added flavor, drizzle balsamic glaze over the top before serving to add a touch of sweetness and acidity.
