Grilled Zucchini and Halloumi

2 medium zucchinis, sliced into ½-inch rounds

8 oz halloumi cheese, sliced into ½-inch thick pieces

3 tablespoons olive oil

1 tablespoon balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

Fresh mint leaves, for garnish

Lemon wedges, for serving

Instructions
 

Marinate the Zucchini: In a large mixing bowl, combine 2 tablespoons of olive oil, balsamic vinegar, minced garlic, dried oregano, and a pinch of salt and freshly ground black pepper. Add the sliced zucchini to the bowl and toss gently to ensure each piece is well-coated in the marinade. Allow the zucchini to marinate for at least 15 minutes to absorb the flavors.

    Prep the Halloumi: While the zucchini marinates, prepare the halloumi. Use a brush to lightly coat both sides of the halloumi slices with the remaining 1 tablespoon of olive oil. This helps to achieve a nice golden crust while grilling.

      Preheat the Grill: Preheat your grill or grill pan over medium-high heat until it reaches a good temperature. You can test if it's ready by flicking a few drops of water onto the surface; if they sizzle, the grill is hot enough.

        Grill the Zucchini: Carefully place the marinated zucchini slices on the preheated grill. Cook for about 3-4 minutes on each side, or until they achieve beautiful grill marks and are tender but still slightly firm. Once done, remove the zucchini from the grill and set aside on a plate.

          Grill the Halloumi: Now, add the oiled halloumi slices to the grill. Grill them for approximately 2-3 minutes on each side, or until they are golden brown and slightly softened. Keep an eye on them to avoid overcooking, as halloumi can become too melty and lose its shape if left too long.

            Assemble the Dish: On a beautiful serving platter, arrange the grilled zucchini and halloumi slices artfully. For an extra touch, drizzle any remaining marinade over the top of the grilled vegetables.

              Garnish and Serve: Finish off the dish by sprinkling fresh mint leaves over the top for a burst of color and flavor. Serve with lemon wedges on the side, allowing guests to squeeze fresh lemon juice over their portions for an extra zesty kick.
