Ingredients
  

1 lb salmon fillet, skinless and cut into 1-inch cubes

1/4 cup soy sauce

1/4 cup mirin (sweet rice wine)

2 tablespoons brown sugar

1 tablespoon sesame oil

2 garlic cloves, minced

1 teaspoon grated fresh ginger

1 tablespoon rice vinegar

1/4 teaspoon black pepper

1 bell pepper (any color), cut into 1-inch squares

1 medium red onion, cut into 1-inch pieces

1 cup pineapple chunks (fresh or canned)

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Prepare the Marinade: In a medium mixing bowl, combine the soy sauce, mirin, brown sugar, sesame oil, minced garlic, grated ginger, rice vinegar, and black pepper. Whisk together until the sugar is dissolved and the ingredients are well blended.

    Marinate the Salmon: Place the cubed salmon fillets into a resealable plastic bag or a shallow dish. Pour half of the prepared marinade over the salmon, making sure the pieces are thoroughly coated. Seal the bag or cover the dish with plastic wrap, then place it in the refrigerator for at least 30 minutes (up to 2 hours for deeper flavor).

      Prepare the Vegetables: In another bowl, add the bell pepper squares, red onion pieces, and pineapple chunks. Drizzle the remaining marinade over them and gently toss until all the vegetables and pineapple are evenly coated.
