4 salmon fillets (approximately 6 ounces each)

2 tablespoons olive oil

2 cloves garlic, finely minced

1 teaspoon paprika

1 teaspoon sea salt

½ teaspoon freshly ground black pepper

½ teaspoon chili powder (optional for a spicy kick)

Juice of 1 fresh lime

For the Pineapple Salsa:

1 cup fresh pineapple, diced into small pieces

½ red bell pepper, finely chopped

½ small red onion, finely diced

1 jalapeño, seeds removed and finely minced (optional for added spice)

¼ cup fresh cilantro, chopped

Juice of 1 lime

Sea salt and black pepper to taste

Prepare the Marinade: In a mixing bowl, combine the olive oil, minced garlic, paprika, sea salt, black pepper, chili powder (if using), and lime juice. Whisk together until well blended to create a flavorful marinade.

    Marinate the Salmon: Place the salmon fillets in a shallow dish, skin-side down. Pour the marinade over the fillets, ensuring they are thoroughly coated. Cover with plastic wrap and let them marinate in the refrigerator for a minimum of 30 minutes (or up to 2 hours for enhanced flavor infusion).

      Make the Pineapple Salsa: In a separate medium bowl, mix together the diced pineapple, chopped red bell pepper, diced red onion, minced jalapeño (if using), chopped cilantro, lime juice, sea salt, and black pepper. Stir well to combine all the ingredients and allow the salsa to sit for at least 10 minutes to let the flavors develop.

        Grill the Salmon: Preheat your grill to medium-high heat. Remove the salmon from the marinade, letting any excess drip off. Place the salmon fillets skin-side down onto the grill grates.
