Ingredients
  

2 ripe peaches, halved and pitted

8 oz burrata cheese, at room temperature

4 cups arugula or a mix of your favorite greens

1/4 cup balsamic glaze

1/4 cup extra-virgin olive oil

1/4 cup toasted pistachios, roughly chopped

A handful of fresh basil leaves, torn

Salt and freshly ground black pepper to taste

Optional: a pinch of red pepper flakes for a touch of heat

Preheat the Grill: Begin by preheating your grill to medium-high heat. It's important to ensure the grates are clean; lightly oil them to prevent the peaches from sticking.

    Prepare the Peaches: While your grill warms up, wash the peaches thoroughly. Slice each peach in half and carefully remove the pit with a spoon or your fingers.

      Grill the Peaches: Once the grill is ready, place the peach halves cut-side down on the grate. Grill them for about 4-5 minutes until you see nice grill marks and the peaches soften slightly. After that, flip them over and grill for an additional 1-2 minutes to warm through. Once done, remove them from the grill and let them cool for a few minutes.

        Arrange the Greens: In a large serving platter or bowl, create a bed of arugula or mixed greens as the fresh base for your salad.

          Add Burrata: Carefully tear the burrata cheese into smaller pieces and scatter them over the arranged greens, allowing the creamy texture to complement the salad.
