Grilled Corn Pasta Salad

2 ears fresh corn, husked

1 red bell pepper, diced into small pieces

1 cup cherry tomatoes, halved

1/4 cup fresh basil leaves, chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

Cook the Pasta: Begin by bringing a large pot of salted water to a vigorous boil. Add the pasta of your choice and cook according to the package directions until al dente, ensuring it retains a slight bite. Once cooked, drain the pasta in a colander and set it aside to cool completely.

    Grill the Corn: While the pasta is cooking, preheat your grill to medium-high heat. Take the husked corn and place it directly on the grill grates. Grill the corn for approximately 10-12 minutes, turning it occasionally until the kernels are nicely charred and tender. Once cooked, remove the corn from the grill and allow it to cool slightly before slicing the kernels off the cobs into a bowl.

      Prepare the Vegetables: In a large mixing bowl, combine the freshly grilled corn kernels, diced red bell pepper, halved cherry tomatoes, diced cucumber, finely chopped red onion, and chopped fresh basil. Stir gently to ensure an even distribution of ingredients.
