4 slices of rustic bread (sourdough or whole grain is recommended)

Extra virgin olive oil, for drizzling

Prep the Corn: If using fresh corn, either grill or boil it for approximately 5-7 minutes or until fork-tender. Allow the corn to cool, then carefully slice the kernels off the cob and set aside.

    Mash the Avocados: In a medium mixing bowl, scoop the flesh of the ripe avocados. Add in the fresh lime juice, garlic powder, a pinch of salt, and a few cracks of black pepper. Using a fork, mash everything together until smooth yet slightly chunky. Taste and adjust the seasoning if needed.
