4 ears of fresh corn, husked

2 ripe avocados, diced into bite-sized pieces

1 medium red onion, finely chopped

1 cup cherry tomatoes, halved

1 jalapeño, seeded and finely minced (adjust based on your spice preference)

1/4 cup fresh cilantro, chopped

Juice of 2 limes (about 1/4 cup)

3 tablespoons extra-virgin olive oil

Salt and freshly cracked black pepper, to taste

Optional: 1 teaspoon smoked paprika for an extra layer of flavor

Instructions
 

Grill the Corn: Begin by preheating your grill to medium-high heat. Once heated, place the husked corn directly onto the grill grates. Grill the corn for approximately 10 to 15 minutes, turning the ears occasionally. You want the kernels to be beautifully charred and tender. After grilling, remove the corn from the grill and set aside to cool.

    Prepare the Corn: When the corn is cool enough to hold, use a sharp knife to carefully cut the kernels off the cob and transfer them into a large mixing bowl. Be sure to get as many kernels as possible for optimal flavor!

      Combine the Ingredients: To the bowl with the grilled corn, add in the diced avocados, finely chopped red onion, halved cherry tomatoes, minced jalapeño, and chopped fresh cilantro. Mix gently to distribute the ingredients evenly without mashing the avocados.
