4 tilapia fillets (approximately 6 ounces each)

1/4 cup fresh lime juice (from about 2 limes)

1/4 cup fresh cilantro, finely chopped

2 cloves garlic, finely minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

Optional Garnish: Lime wedges and extra cilantro sprigs

Marinate the Fish: In a medium-sized mixing bowl, combine the lime juice, chopped cilantro, minced garlic, ground cumin, smoked paprika, salt, black pepper, and olive oil. Whisk the mixture thoroughly until well blended. Place the tilapia fillets in a shallow dish or a resealable plastic bag, and pour the marinade over the fish. Ensure each fillet is generously coated in the marinade. Cover the dish or seal the bag, and refrigerate for a minimum of 30 minutes to allow the flavors to infuse into the fish.

    Preheat the Grill: Start by preheating your grill to medium-high heat. If you're using a charcoal grill, set up a two-zone fire by arranging hot coals on one side and leaving the other side coal-free for indirect cooking.

      Prepare the Grill Grate: To prevent sticking, take a paper towel dipped in vegetable oil and gently wipe the grill grate.

        Grill the Tilapia: Once the grill is adequately heated, take the tilapia out of the marinade, allowing any excess marinade to drip off. Carefully place the fillets directly onto the grill grates. Grill the fish for approximately 3-4 minutes on each side, or until the tilapia easily flakes with a fork and has beautiful grill marks.
