8 small corn tortillas

1 cup diced onions

Marinate the Chicken: In a mixing bowl, whisk together the olive oil, minced garlic, chili powder, ground cumin, smoked paprika, dried oregano, lime juice, salt, and pepper until well combined. Add the chicken thighs to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap or a lid and let the chicken marinate in the refrigerator for at least 30 minutes. For enhanced flavor, allow it to marinate for up to 2 hours.

    Preheat the Grill: Prepare your grill for cooking by preheating it to medium-high heat. If you are using a grill pan on the stovetop, heat it over medium heat until hot.
