8 oz whole wheat penne pasta

2 boneless, skinless chicken breasts

2 tbsp olive oil (for chicken)

1 tsp dried oregano

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/2 red onion, finely chopped

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

For the Dressing:

3 tbsp olive oil

2 tbsp red wine vinegar

1 tbsp fresh lemon juice

1 tsp Dijon mustard

1 clove garlic, minced

1 tsp honey (optional)

Cook the Pasta: Start by bringing a large pot of salted water to a boil. Add the whole wheat penne pasta and cook according to the package instructions until it reaches al dente texture (about 8-10 minutes). Once cooked, drain the pasta and rinse it under cold running water to halt further cooking. Set aside to cool.

    Prepare the Chicken: As the pasta cooks, preheat your grill to medium-high heat. In a small mixing bowl, whisk together 2 tablespoons of olive oil, dried oregano, a pinch of salt, and freshly ground black pepper. Brush this mixture generously over the chicken breasts on both sides.
