Grilled Chicken and Peach Skewers

1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

2 ripe peaches, pitted and cut into wedges

1 medium red onion, cut into large chunks

1 red bell pepper, cut into 1-inch squares

3 tablespoons olive oil

2 tablespoons honey

1 tablespoon balsamic vinegar

2 cloves garlic, minced

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

Salt and pepper, to taste

Skewers (if using wooden skewers, soak them in water for 30 minutes prior)

Marinate the Chicken: In a large mixing bowl, combine the olive oil, honey, balsamic vinegar, minced garlic, chopped thyme, salt, and pepper. Whisk the ingredients until well blended. Add the chicken cubes to the bowl and toss them thoroughly to ensure they are evenly coated with the marinade. Cover the bowl with plastic wrap and place it in the refrigerator to marinate for at least 30 minutes, or up to 2 hours for enhanced flavor.

    Prep the Grill: When you're ready to grill, preheat your grill to medium-high heat. If you're using wooden skewers, make sure they have been soaked in water to prevent burning during grilling.
