Grilled Balsamic Sandwich Melt

4 slices of sourdough bread

1 cup fresh spinach, washed and dried

1 medium tomato, thinly sliced

1 ripe avocado, peeled and mashed

1 cup fresh mozzarella cheese, sliced or shredded

1/4 cup balsamic glaze

2 tablespoons olive oil

Salt and pepper, to taste

Fresh basil leaves for garnish (optional)

Prepare the Bread: Begin by preheating a grill pan or a non-stick skillet over medium heat. While the pan heats up, brush one side of each slice of sourdough bread generously with olive oil. This will help create a beautifully golden and crispy crust when grilled.

    Layer the Ingredients: On the un-oiled side of two slices of bread, evenly distribute the fresh spinach leaves. Next, layer the tomato slices on top of the spinach, followed by a generous scoop of mashed avocado. Place the fresh mozzarella slices atop the avocado, then drizzle about a tablespoon of balsamic glaze over the cheese. Season the layers with a sprinkle of salt and pepper to taste.
