1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon cayenne pepper (optional, for extra heat)

1/4 cup granulated sugar

1 cup buttermilk (or substitute with regular milk mixed with a splash of vinegar)

1 large egg

1/4 cup vegetable oil or melted butter

1 cup fresh corn kernels (you can also use canned corn, just make sure to drain it)

1 cup diced green chilies (either canned or freshly roasted)

1 cup shredded cheddar cheese (optional)

Fresh cilantro (optional, for garnish)

Instructions
 

Preheat the Oven: Set your oven to preheat at 400°F (200°C). Prepare a mini muffin tin by greasing it lightly or lining it with mini muffin liners.

    Mix Dry Ingredients: In a large mixing bowl, thoroughly combine the cornmeal, all-purpose flour, baking powder, baking soda, salt, cayenne pepper (if you'd like it spicy), and sugar. Use a whisk to ensure there are no lumps and everything is evenly distributed.

      Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk, egg, and vegetable oil (or melted butter) until the mixture is smooth and well blended.

        Combine Mixtures: Carefully pour the wet ingredients into the bowl containing the dry ingredients. Using a spatula, gently fold the mixtures together until just combined. Take care not to over-mix; it’s perfectly fine if a few lumps remain.
