3 large ripe tomatoes, diced into bite-sized pieces

1 medium cucumber, peeled and diced

1 bell pepper (any color), chopped into small chunks

1 red onion, thinly sliced into rings

1 cup Kalamata olives, pitted and halved

200g (about 7 oz) feta cheese, crumbled

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

Fresh parsley or mint leaves, for garnish (optional)

Instructions
 

In a large salad bowl, add the diced tomatoes, cucumber, bell pepper, and sliced red onion. Gently mix them to combine.

    Add the pitted and halved Kalamata olives to the vegetable mixture, ensuring an even distribution for a balanced flavor in every bite.
