Instructions

Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, whisk together the 1 ½ cups of all-purpose flour, ½ cup of granulated sugar, baking powder, and salt until evenly combined. Pour in the melted butter and add the vanilla extract. Mix the ingredients with a spatula or your fingers until the mixture resembles coarse crumbs. Press this mixture firmly and evenly into the bottom of a greased 9x13-inch baking dish to form the crust layer. Bake in the preheated oven for about 10 minutes, or until lightly golden brown. Remove from the oven and allow to cool slightly while preparing the filling.

Make the peach filling: In a large mixing bowl, add the diced fresh peaches, ½ cup of granulated sugar, cornstarch, lemon juice, ground cinnamon, and nutmeg. Gently stir the ingredients together with a spoon until the peaches are well coated with the mixture. Let this sit for about 10 minutes to allow the flavors to meld and the juices from the peaches to release.

Prepare the topping: In another bowl, combine the 1 cup of rolled oats, ½ cup of all-purpose flour, packed brown sugar, and a pinch of salt. Use a fork or pastry cutter to cut in the softened butter until the mixture becomes crumbly and resembles coarse crumbs.

Assemble the bars: Pour the prepared peach filling evenly over the pre-baked crust, spreading it out gently with a spatula. Then, sprinkle the oat topping generously over the peach filling, ensuring that every piece of peach is covered for optimal gooeyness.

Bake the bars: Place the baking dish back in the oven and bake for an additional 25-30 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.

Cool and cut: Once baked, take the dish out of the oven and let it cool completely in the baking dish set on a wire rack. This cooling step is important to help the bars set properly. Once cooled, cut into squares and serve warm or at room temperature for a delightful treat.
