Ingredients

For the Chicken Marinade:

1 lb boneless, skinless chicken thighs

1/4 cup teriyaki sauce

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1 tablespoon sesame oil

Salt and pepper, to taste

For the Ramen Bake:

2 packs of instant ramen noodles (discard the seasoning packets)

2 cups chicken broth

1 cup broccoli florets

1 cup bell pepper, thinly sliced (red or yellow)

1/2 cup green onions, chopped (divided)

1 cup shredded carrots

1 tablespoon soy sauce

1 tablespoon sriracha (optional, for added heat)

1 cup shredded cheese (mozzarella or a blend)

1 tablespoon sesame seeds for garnish

Instructions

Marinate the Chicken: In a medium bowl, whisk together the teriyaki sauce, freshly grated ginger, minced garlic, sesame oil, salt, and pepper. Add the chicken thighs to the bowl, ensuring they are fully coated in the marinade. Cover with plastic wrap and refrigerate for a minimum of 30 minutes, or up to 2 hours for enhanced flavor.

Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking.

Cook the Chicken: Heat a large skillet over medium heat. Remove the chicken thighs from the marinade and place them in the skillet. Cook for 5-7 minutes on each side, or until the chicken is fully cooked (internal temperature should reach 165°F or 74°C). Once cooked, transfer the chicken to a cutting board and let it cool slightly before shredding into bite-sized pieces.

Prepare Ramen Noodles: While the chicken is cooking, bring a pot of water to a rolling boil. Add the instant ramen noodles and cook according to the package instructions, usually about 3-4 minutes. Drain the noodles and set aside.

Combine Ingredients: In a large mixing bowl, combine the shredded chicken, cooked ramen noodles, chicken broth, broccoli florets, sliced bell peppers, half of the chopped green onions, shredded carrots, soy sauce, and sriracha (if using). Stir gently until all ingredients are evenly mixed.

Transfer to Baking Dish: Lightly grease a 9x13 inch baking dish. Pour the noodle and chicken mixture into the dish, spreading it out evenly to ensure even cooking.

Add Cheese: Sprinkle the shredded cheese generously over the top of the ramen mixture, covering it well.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly with a light golden color.

Garnish: Once baked, remove the dish from the oven and allow it to cool for a few minutes. Garnish with the remaining chopped green onions and sprinkle sesame seeds on top for extra flair.

Serve: Spoon generous portions onto plates and savor your delightful Ginger Teriyaki Chicken Ramen Bake!
