1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

Zest and juice of 1 large lemon (about 2-3 tablespoons juice)

1 teaspoon ground cumin

1 teaspoon smoked paprika

Sea salt and freshly cracked black pepper, to taste

4 large whole wheat or spinach tortillas

1 cup baby spinach leaves, washed and dried

1 cup cherry tomatoes, halved

½ cucumber, diced into small pieces

¼ red onion, thinly sliced

Fresh parsley or cilantro, for garnish

Optional: ½ avocado, thinly sliced

Instructions
 

Prepare the Chickpeas: In a medium skillet, heat the extra virgin olive oil over medium heat. Once hot, add the minced garlic and sauté for about 1 minute until fragrant and translucent, taking care to stir frequently so it doesn’t burn.

    Season the Chickpeas: Add the rinsed chickpeas to the skillet, stirring in the lemon zest, lemon juice, ground cumin, smoked paprika, sea salt, and freshly cracked black pepper. Mix everything thoroughly and cook for 5-7 minutes, allowing the chickpeas to absorb the flavors. Remove from heat and let the mixture cool slightly.

      Assemble the Wraps: On a clean, flat surface, lay out the tortillas. Evenly distribute the sautéed chickpea mixture across the center of each wrap, ensuring to leave space at the edges for wrapping.

        Add Fresh Veggies: Top the chickpea mixture generously with fresh baby spinach, halved cherry tomatoes, diced cucumber, and thinly sliced red onion. For an extra creamy texture, add slices of avocado if desired.

          Wrap it Up: Carefully fold in the sides of each tortilla over the filling, then roll up from the bottom to create a snug and secure wrap.
