Ingredients

1 can (15 oz) chickpeas, drained and rinsed

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon salt

¼ teaspoon black pepper

4 large whole grain or spinach wraps

1 cup mixed greens (spinach, arugula, or lettuce)

½ cup cherry tomatoes, halved

½ cucumber, sliced

¼ red onion, thinly sliced

¼ cup feta cheese, crumbled (optional)

¼ cup tzatziki sauce or hummus (for spreading)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). To make cleanup easier, line a baking sheet with parchment paper.

Prepare the Chickpeas: In a medium-sized mixing bowl, combine the drained chickpeas with olive oil, minced garlic, smoked paprika, dried oregano, dried thyme, salt, and black pepper. Toss the mixture well until the chickpeas are thoroughly coated with the seasonings.

Roast the Chickpeas: Spread the seasoned chickpeas out in a single layer on the prepared baking sheet. Place them in the preheated oven and roast for 25-30 minutes, or until they are golden brown and crispy. To ensure even cooking, shake the baking sheet halfway through the roasting time.

Assemble the Wraps: After the chickpeas have finished roasting, remove them from the oven and allow them to cool slightly. Take one of the wraps and spread a generous layer of tzatziki sauce or hummus in the center, covering a good area to add moisture.

Layer Fresh Ingredients: On top of the spread, add a handful of mixed greens, followed by a portion of the roasted chickpeas. Next, layer in halved cherry tomatoes, cucumber slices, and thinly sliced red onion. If you're using feta cheese, sprinkle it over the top for an added burst of flavor.

Roll the Wraps: Carefully fold in the sides of the wrap, then roll it tightly from the bottom up to encase all the delicious fillings. Repeat this process for the remaining wraps.

Serve: If you'd like, cut each wrap in half for easier handling and serve immediately. Pair them with extra tzatziki or hummus for dipping, or enjoy them cold for a refreshing meal option.
