14 oz firm tofu, pressed and cubed

3 tablespoons olive oil

4 cloves garlic, minced

2 teaspoons dried oregano

2 teaspoons dried thyme

1 teaspoon smoked paprika

Salt and freshly ground pepper, to taste

4 whole wheat or spinach wraps

1 cup fresh spinach leaves, rinsed

1 medium tomato, diced

½ cup cucumber, diced

¼ cup red onion, thinly sliced

½ avocado, sliced

Optional: Hummus or tzatziki sauce for spreading

Prepare the Tofu: Begin by pressing the tofu for at least 30 minutes to extract as much moisture as possible. Once pressed, cut the tofu into 1-inch cubes for even cooking.

    Marinate the Tofu: In a large mixing bowl, whisk together the olive oil, minced garlic, dried oregano, dried thyme, smoked paprika, and a generous pinch of salt and pepper. Add the cubed tofu to the bowl and gently toss until each piece is well-coated with the marinade. Allow the tofu to marinate for 15-20 minutes to absorb the flavors.

      Air Fry the Tofu: Preheat your air fryer to 375°F (190°C). Once preheated, arrange the marinated tofu cubes in a single layer in the air fryer basket. Cook for 15-20 minutes, shaking the basket halfway through the cooking time to ensure even crisping, until the tofu is golden brown and crispy on the outside.

        Assemble the Wraps: While the tofu is cooking, prepare your wraps. Take each whole wheat or spinach wrap and spread a generous layer of hummus or tzatziki sauce (if desired) in the middle. This adds flavor and moisture to your wrap.

          Add the Fillings: On top of the spread, layer fresh spinach leaves, diced tomatoes, diced cucumbers, and thinly sliced red onion for a burst of freshness. Once the tofu has finished cooking, remove it from the air fryer and allow it to cool slightly before adding it to your wraps to prevent sogginess.

            Wrap it Up: Place a portion of the crispy tofu into the center of each wrap, followed by several slices of avocado for creaminess. Fold in the sides of the wrap and then tightly roll it from the bottom up to enclose the filling securely.
