Ingredients

1 pound (450g) potato gnocchi

3 tablespoons unsalted butter

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup zucchini, chopped into bite-sized pieces

1 bell pepper (red or yellow), diced

1 cup fresh spinach leaves

1 teaspoon dried Italian herbs (a mix of oregano, basil, and thyme)

Salt and pepper, to taste

Grated Parmesan cheese, for serving

Fresh basil leaves, for garnish (optional)

Instructions

Cook the Gnocchi: Begin by bringing a large pot of salted water to a rolling boil. Add the gnocchi to the boiling water and cook according to package instructions, which usually takes about 2-3 minutes. The gnocchi are done when they float to the surface. Once cooked, carefully drain them and set aside.

Prepare the Veggies: In a large skillet, heat the unsalted butter over medium heat. Once the butter is melted, add the minced garlic and sauté for approximately 1 minute, or until it becomes fragrant, ensuring not to let the garlic burn.

Sauté the Vegetables: Next, introduce the cherry tomatoes, zucchini, and diced bell pepper into the skillet. Cook this mixture for about 5-7 minutes, stirring occasionally, until the vegetables are tender and the tomatoes begin to burst and release their juices.

Combine with Gnocchi: Then, add the cooked gnocchi to the skillet along with the fresh spinach and dried Italian herbs. Gently stir everything together, allowing it to cook for an additional 2-3 minutes, until the spinach has wilted and all ingredients are heated through.

Season and Serve: Taste the skillet mixture and season with salt and pepper as needed. Once seasoned to your liking, remove the skillet from heat. Serve immediately, generously topped with grated Parmesan cheese and garnished with freshly torn basil leaves if desired.
