Ingredients

12 oz linguine

1 lb large shrimp, peeled and deveined

4 tbsp unsalted butter, divided

2 tbsp olive oil

6 cloves garlic, minced

1/2 tsp red pepper flakes (adjust to your spice preference)

1/2 cup dry white wine, such as Sauvignon Blanc

Juice of 1 lemon

Zest of 1 lemon

Salt and freshly ground black pepper, to taste

1/4 cup fresh parsley, finely chopped

Freshly grated Parmesan cheese, for serving

Instructions

Cook the Linguine: In a large pot, bring salted water to a rolling boil. Add the linguine and cook according to the package’s instructions until al dente, typically about 9-11 minutes. Once cooked, reserve 1 cup of the starchy pasta water, then drain the linguine and set it aside.

Sauté the Shrimp: In a large skillet, heat 2 tablespoons of butter along with the olive oil over medium heat. When the butter has melted and is bubbling, arrange the shrimp in a single layer in the skillet. Season the shrimp with salt, pepper, and red pepper flakes. Cook for about 2-3 minutes on each side until the shrimp turn pink and opaque. Once cooked, use tongs to remove the shrimp from the skillet and place them aside on a plate.

Prepare the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Gently sauté for 1-2 minutes, stirring often, until the garlic becomes fragrant but is not browned—this will avoid bitterness in the sauce.

Deglaze with White Wine: Carefully pour in the dry white wine and the fresh lemon juice. Use a wooden spoon to scrape up any browned bits from the bottom of the skillet, which are full of flavor. Allow the mixture to come to a gentle simmer, cooking for about 3-4 minutes until the sauce slightly thickens and reduces.

Combine Pasta and Shrimp: Lower the heat to low and add the drained linguine to the skillet along with the sautéed shrimp. Toss everything together until well coated in the buttery sauce. If the mixture appears dry, gradually add the reserved pasta water, a little at a time, until you achieve the desired creaminess. Stir in the lemon zest and taste, adjusting the seasoning with additional salt and pepper if necessary.

Garnish and Serve: Once everything is well combined and heated through, remove the skillet from the heat. Stir in the finely chopped parsley for a fresh touch. Serve the dish immediately, topped generously with freshly grated Parmesan cheese for added flavor.

                - Presentation Tips: For an elegant touch, serve the linguine in warmed bowls, garnished with extra parsley and a lemon wedge on the side for a pop of color. A light drizzle of olive oil can also elevate the dish’s final presentation.
